Sweet Potato & Black Bean Tacos

Sweet Potato & Black Bean Tacos
(dairy free - plant based - vegan)


Ingredients

• 3 medium-sized sweet potatoes
• 1 can of black beans
• 2 tbsp coconut oil
• 1 avocado
• 1 pinch of salt
• Lime wedges (optional) 
• Tortillas (CLICK HERE for my favorite recipe)
• Chipotle Cream Sauce (CLICK HERE)


Instructions

• Start by peeling and cubing your sweet potato (I recommend doing smaller cubes to allow them to cook through without having to boil them before adding)
• Heat coconut oil in a pan on medium heat and add your sweet potatoes and a pinch of salt
• Cover and cook on medium heat for about 20-25 minutes or until you reach desired texture
• Next, in a small pot cook black beans on medium heat for about 10 minutes
• Once cooked, strain and rinse off excess bean juice to avoid soggy tacos
• Lastly, heat tortillas in a pan, remove from heat, and assemble your tacos with your fave toppings! 


These tacos are a fam favorite and are in our weekly rotation.

Chocolate Coconut Bliss Balls (dairy free - plant based - vegan) Ingredients • 2 tbsp almond butter • 2 tbsp cacao or cocoa powder • 1/2 tsp vanilla paste or extract • 3 tbsp unsweetened coconut flakes • 2 tbsp pure maple syrup • 5 pitted dates • pinch of sea salt Instructions • blend all the ingredients in a food processor into a dough-like mixture. If too wet, add a bit more cacao powder and coconut flakes. • refrigerate for 10 minutes then form dough into balls. • roll in extra coconut flakes or cacao powder (optional). • if there are any leftovers, store in a well-sealed container (I use stasher bags ) in the refrigerator up to 1 week or in the freezer up to one month.

Peanut Butter & Jelly Smoothie (dairy free - plant based - vegan) Ingredients • handful of frozen mixed berries •1 frozen banana • 1c almond milk •1/2 scoop @doterra vegan vanilla protein • 2 tbsp PB • ice, ice baby Instructions • Add all ingredients to a blender and blend on high until smooth! Add to your favorite cup and enjoy on a hot summer day! I love Weck Jars because they hold more smoothie 😂

Vegan Chipotle Cheese Sauce (dairy free - plant based - vegan) Ingredients • 1 cup cashews (soaked overnight) • 1 cup unsweetened almond milk • ½ cup nutritional yeast • 1 tablespoon garlic powder or 2 cloves minced garlic (we love garlic) • 1 chipotle pepper in adobo or sub 1/2 tsp chipotle powder (you can add more if you like a little more heat) • 5 small carrots (not required but recommended) • 1/2 tsp salt (add more as desired) Instructions • Add all ingredients to a blender and blend on high for 2-3 minutes or until smooth- THAT EASY

Mother’s day always brings up so many emotions for me. I miss my mom and I wish she was here to be loved on. It’s important to remember that time is short, so cherish everyday and make sure you tell your mom you love them even if they tell you the same thing 11x ;) As you think of sweet gestures, remember that it doesn’t have to cost you a thing to make her feel special, seen, loved and appreciated. Make her a meal, pick flowers from the garden, deep clean the house, be present with her. Times are tough so never feel pressured to purchase, but if you want to get her something, I’ve shared a few ideas that I would love to gift my momma in hopes this helps you!
